01 - Combine the drained feta and softened cream cheese in a food processor. Blend on high until completely smooth and creamy, pausing to scrape down the sides as needed, approximately 1 to 2 minutes.
02 - Transfer the whipped feta mixture to a shallow serving bowl, using the back of a spoon to smooth the surface into an even layer with a slight well in the center for the honey.
03 - In a small saucepan over low heat, warm the honey and red pepper flakes together for 2 to 3 minutes until fragrant and gently simmering. Do not bring to a full boil. Remove from heat and let stand for 1 minute to cool slightly.
04 - Spoon the warm hot honey evenly over the surface of the whipped feta. Finish with a sprinkle of minced fresh herbs and freshly cracked black pepper if desired.
05 - Present immediately with crusty bread, toasted pita chips, or fresh vegetable crudités alongside. The spread is best enjoyed warm while the honey is still fluid.
