04 - 1 tbsp fresh dill, finely chopped

→ For the Spicy Chili Honey

09 - 1/3 cup honey
10 - 1-2 tsp chili flakes (adjust to taste)
11 - 1 tsp fresh lemon juice
12 - Pinch of salt

# How To Make It:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - In a bowl, combine feta, cream cheese, parsley, dill, lemon zest, and black pepper. Mix until well blended.
03 - Lay one sheet of phyllo pastry on a clean surface and brush lightly with melted butter. Place another sheet on top and brush again. Cut the layered sheets into thirds lengthwise to create 3 strips.
04 - Place a heaping tablespoon of the feta filling near one end of each strip. Fold in the sides and roll up tightly to seal. Repeat with remaining phyllo and filling to make 12 rolls.
05 - Arrange rolls seam-side down on the prepared baking sheet. Brush tops with remaining melted butter.
06 - Bake for 18-20 minutes until golden and crisp.
07 - Meanwhile, in a small saucepan over low heat, combine honey, chili flakes, lemon juice, and salt. Warm gently for 2-3 minutes, stirring, until aromatic (do not boil). Set aside.
08 - Serve feta rolls hot, drizzled with spicy chili honey.

# Expert Suggestions:

01 -
  • The crispy shattering of phyllo against that cool creamy center hits every texture craving at once
  • The spicy honey turns something already good into something completely addictive
  • They look impressive but come together in under an hour, mostly hands-off baking time
02 -
  • Phyllo dries out in minutes once the package opens, so work quickly and cover unused sheets with a damp cloth
  • The rolls can be assembled ahead and frozen raw then baked directly from frozen, adding 5 minutes to baking time
  • That honey keeps for weeks in the fridge and makes everything from roasted vegetables to ice cream taste better
03 -
  • Brush butter all the way to the edges of the phyllo strips so every bite shatters perfectly
  • Let the rolls rest 2 minutes after baking before drizzling so the honey doesnt slide right off
