# How To Make It:

01 - Preheat the oven to 350°F. Line a 9x13-inch baking pan with parchment paper, leaving an overhang for easy removal.
02 - In a large bowl, combine flour, oats, granulated sugar, brown sugar, baking powder, and salt.
03 - Add melted butter and vanilla extract to the dry ingredients. Stir until crumbly and evenly moistened throughout.
04 - Reserve 1 ½ cups of the crumb mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared pan to form an even crust.
05 - In a separate bowl, toss cherries with sugar, cornstarch, lemon juice, and almond extract until evenly coated.
06 - Spread the cherry mixture evenly over the crust. Sprinkle the reserved crumble mixture uniformly over the cherries.
07 - Bake for 35–40 minutes until the top is golden brown and the filling is bubbling around the edges.
08 - Cool completely in the pan, then lift out using the parchment overhang. Cut into bars and serve.

# Expert Suggestions:

01 -
  • The crust and crumble use the same mixture, so you're not dirtying extra bowls or measuring twice
  • Cherries bubble up through the topping in the most gorgeous way while baking
02 -
  • Press the crust firmly with the bottom of a measuring cup so it bakes into a solid base that won't crumble apart
  • Waiting for the bars to cool completely is absolute torture but cutting them warm will give you a messy, falling-apart situation
03 -
  • If your frozen cherries release a lot of liquid, add an extra teaspoon of cornstarch to prevent a soggy bottom
  • The almond extract is subtle but absolutely worth it, just a quarter teaspoon if you're not sure
