- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Heat a skillet over medium heat. Add ground beef, season with salt, black pepper, garlic powder, and dried Italian herbs. Cook for about 5 minutes until browned and completely cooked. Drain excess fat and set aside to cool slightly.
- Roll out pizza dough on a lightly floured surface into a rectangle approximately 12 x 10 inches.
- Spread pizza sauce evenly over the dough, leaving a 3/4 inch border on all sides.
- Distribute cooked ground beef evenly over the sauce layer. Arrange pepperoni slices over the beef. Top with shredded mozzarella and grated Parmesan cheese.
- Starting from a long side, roll the dough tightly into a log and pinch the seam to seal.
- Slice the log into 8 equal pieces and place cut side up on the prepared baking sheet.
- Brush the tops of the rolls with olive oil.
- Bake in the oven for 12 to 15 minutes until the tops are golden brown and cheese is melted and bubbly.
- Allow roll ups to cool for 3 minutes before serving. Garnish with fresh basil or parsley if desired and serve with extra pizza sauce for dipping.
